I tend to do more breaths for my favourite or easy poses and less for the difficult poses.

I think you may have answered your own question. It entirely depends on the type of practice you want - or your teacher is wanting to teach. Some styles hold poses longer - like iyengar - and some hold them for less time - like ashtanga. If you have a home practice that is self-guided, it can give you the opportunity to stay in any pose if you feel the need.
